Cold Cottage Bean Salad
  • 2 c. low fat cottage cheese
  • 2 c. cooked dried beans (navy, Great Northern, pinto or black beans)
  • 2 c. shredded Chinese or Napa cabbage
  • 1 c. diced smoked chicken or turkey
  • 1 c. pitted whole black olives
  • 1/2 c. sliced radishes
  • 1/4 c. finely chopped parsley
  • 1 c. prepared Italian or vinaigrette salad dressing
  • Garlic bread toast

 

Combine all ingredients in large bowl. Toss well. Cover and chill. Serve with garlic bread toast. Makes 6 to 8 servings.
